Who knew something so simple could taste so freakin' amazing?! Never again will Mexican restaurants pass any kind of rice test with us. Yeah, that means YOU Chipotle, with your fake limey rice that has NUTHIN' on this. Eat this, baby. Yeah. I told 'em.
- 1 Cup Rice
- 2 Cups Water
- ¼ Cup chopped fresh cilantro
- Zest of 1 whole lime
- 3 T oil light olive, vegetable, canola, or even coconut oil to add a tropical flair. Do NOT use virgin or extra virgin.
- 1 tsp salt
Combine rice and water in a saucepan, and bring to a boil. Reduce and simmer until the sound of girgling bubbles in the bottom of the pan turns to a snap-crackle-pop sound... like Rice Krispies Cereal.
Remove the pan from heat and fluff the rice with a fork immediately.
Add cilantro, lime, oil, and salt. Stir well. Add more lime zest, cilantro, or salt as desired.
